Liver Muffins

1 lb liver

one package corn muffin mix (I use the $.50 jiffy mix)

Put the liver in a blender or food processor and liquefy it all. You can use some garlic or garlic powder to help with the smell. Mix in the corn muffin mix and pour it into a pie pan. Put it in the microwave for about 15 minutes. CAREFUL – IT’S HOT when it’s done. Let it cool and cut into pieces. Store in the refrigerator. You can freeze them too, but they get a littlie crumbly when they thaw.
